I cook crustless quiche a few times a month. Yes even my kids love it now. It took several times of serving it and calling it “cheese pie”, but not it’s one of our all time favorite meals! I make “regular” spinach quiche as well but this is a fun way to mix it up.

If you’ve read my blog for any time you know I am a little obsessed with my muffin pan! I love making anything in smaller sizes. They cook faster and kids think it’s “fun”!! When it comes to quiche the same applies, plus it is great to serve as an appetizer when people come over. All you have to do is use a mini muffin pan that is non stick.

Yes I have made this whole in a pie dish as well and I have a link to that one above the top photo. Without the crust I think it works better this way. You get a nice firmer edge all the way around the circle of it this way, but can still skip the extra calories and carbs.

Crustless spinach quiche recipe

The recipe for the crustless spinach quiche mixture is super easy, you can follow or print it out below. It is really a quick recipe to throw together, low in carbs if you are concerned with that and really tasty! We pair it with some sliced Italian sausage air fryer style or just have another veggie on the side and call it dinner!

Ingredient Notes

eggs will be whisked, and should be added at room temperature if possible. An alternative with lower fat is that you could just cook egg whites only instead but add 1 more in this case.

For the main veggie I use the 10 oz. (or 1 package) of Green Giant frozen creamed spinach heated as directed on the back of the box in the first step. We share with you how to cook frozen spinach but then you would need to make into creamed for this, directions for that below. I like the already done type in the freezer and I just microwave it to defrost.

The second main thing you add is some shredded Swiss cheese like we do with small ones or large like our cottage cheese quiche.. This is the most common type of dairy used but you could use half and half with mozzarella.

If you want to add a bit of meat you could fold in some precooked diced ham or bacon bits, optional

I like some sliced portabella or button mushrooms  in there with some salt and pepper to taste.

with Crust

I just use a spoon to scoop them out after they have rested in the pan for about 10 minutes. That will allow each to solidify a bit more before removing. You can try it differently and make this mini quiche recipe with a crust.

Crustless Mini Quiche Recipe

Equipment

  • 1 muffin tin
  • 1 Bowl

Ingredients 

  • 3 large eggs
  • 10 oz creamed spinach, Green giant used, 1 pkg. defrosted in microwave, or 10 oz homemade
  • 1 cup swiss cheese
  • 1 tbsp bacon bits, optional
  • 3-4 mushrooms, optional
  • 1 pinch salt

Instructions 

  • Shred the swiss cheese, add 3 eggs and other ingredients to the bowl. 
  • Microwave the package of creamed spinach according to the directions and add that too
  • Spray muffin tin with non stick spray. Fill mini muffin tin cups about 3/4 full and cook at 350 degrees for 12-14 minutes or until lightly brown.

with Potatoes

Another idea is to dice up what you have left and throw it into a pan with some hashbrowns or diced potatoes. Make a sort of breakfast stir fry of sorts. Make more scrambled eggs and add this in chopped up for a bit of veggies with a dash of hot sauce. Makes another great 2nd or 3rd meal. You know how I hate wasting food so I always have ideas galore. 😉

Can you add a crust?

If  you want to make a “regular” quiche just use the same recipe, add it to a pot pie crust shell and cook for closer to 25 minutes or until lightly browned. Or make one with a tater tot pie crust sometime too.

Can you make creamed spinach homemade?

Frozen prepackaged by Green Giant works, or make your own homemade creamed spinach in a large skillet on the stove. This is what they should look like when you take them out. You want them to feel slightly firm in the center but not really browned as they will end up a bit overcooked if you do that.

Can you use broccoli instead of spinach in quiche?

How to Save Leftovers

If you do have leftovers they keep and reheat quite well. Just wrap each one in plastic wrap after they have cooled. Store in the fridge overnight and heat in the microwave again for about 45 seconds to enjoy again.
